We host five chefs in residence who will be preparing dinners and farm to table meals.
It will occur between December 2025 and March 2026.
There are two ways to enjoy it:
– dining under the stars
– farm to table meal (with Mestiza de Indias)
Dinner under the stars
During the chefs’ residency, you can dine at Galopina without staying at the hotel. Every night we serve dinner for our guests.
Three course menu. Depending on product availability, let yourself be surprised!

Farm to table meal
(with Mestiza de Indias)
A table in the countryside, the chef cooking live and flavors created with Mestiza de Indias vegetables and seafood. Spontaneous meals, generous and full of country spirit. Come and experience the taste of the bush, under the open sky.
Menu of four or more times. It is decided the day before according to the availability of products.

Hours: 3pm to 6pm
Saturdays and Sundays (during each chef’s residency).
